PIP Food Group’s technologists spent two weeks in Weinheim, where they honed their skills at the Akademie Deutsches Bäckerhandwerk Weinheim.
They attended the course “Diploma in German Bread Baking,” where they were introduced to the rich tradition of German bread.
In a dynamic environment, together with colleagues from different countries, they exchanged experiences and learned from experienced lecturers.
The training included a theoretical and practical part, with a special focus on the use of sourdough and pre-test, as well as the preparation of long-fermented and high-hydration breads.
Also, the production of different types of bread, such as rye bread, chabata and Bavarian pretzels, is covered in detail.
They used their free time to tour Wineheim and taste local breads and pastries, which contributed to the overall positive impression.
At the end of the course, they took a practical exam and successfully demonstrated the acquired knowledge, completing the training with a diploma ceremony.
This experience has enriched our technologists not only with new knowledge, but also with a deeper understanding of the German baking tradition, which will bring fresh ideas and innovations to the domestic bakery industry.
